Hello, Talku Talku foodies! We will be learning how to make turkey carcass soup. You can make this out of fresh turkey or leftovers. Either way, your turkey will not go to waste with this recipe. Let’s get started.

Ingredients
- 1 turkey carcass
- 6 small diced potatoes
- 4 large diced carrots
- 2 stalks of diced celery
- 4 quarts of water
- 1 ½ cups of shredded cabbage
- 1 large diced onion
- ½ cup of raw barley
- 1 teaspoon of dried basil
- 1 tablespoon of Worcestershire sauce
- 1 teaspoon of dried parsley
- 1 teaspoon of dried basil
- 1 bay leaf
- ¼ teaspoon of freshly cracked black pepper
- ¼ teaspoon of paprika
- 1 ½ teaspoons of salt
- ¼ teaspoon of poultry seasoning
- 1 pinch of dried thyme
Recipe
- Place your turkey carcass in a large sauce pan. Add some water and bring to boil.
- When it starts to boil, lower the heat and bring to a simmer.
- Cook the turkey until the meat falls off the bones. This should take about an hour to achieve.
- Remove the turkey flesh/carcass and chop the meat into pieces.
- Get a clean soup pot and strain your turkey broth through a fine mesh strainer into it.
- Add your chopped turkey into the strained broth. Boil with low-medium heat.
- Pour your diced potatoes, onions, celery, carrots, cabbage, barley, tomatoes, parsley, basil, bay leaf, Worcestershire sauce, salt, paprika, black pepper, thyme and poultry seasoning into the broth and stir properly.
- Bring soup to simmer for about an hour until all the vegetables are tender.
- Remove the bay leaf from the soup and your turkey carcass soup is ready to serve.
